Tortilla Soup with Crisp Tortillas and Avocado Relish

One of my new year's resolution is to cook three new recipes per week. I started a little early. Here's what I made for New Year's Eve dinner... (From my new Gourmet cookbook!) This soup is absolutely fantastic. I would definitely make it again, and I would also make the tortilla chips/avocado relish as a snack. (It's a great twist on guacamole!)

I couldn't find any of the chiles required for this (grr). For the soup I used: 1 teaspoon ancho chile powder, 1 teaspoon chili powder, and 1 teaspoon cayenne pepper. For the relish, I used a green chile instead of a serrano, which turned out to be a good idea because the soup was spicy. I decided to bake the chips instead of frying them. Brush each side with oil (I used vegetable oil like they recommended) and bake at 375˚F in one layer on a baking sheet for 10-12 minutes. The tortillas you're going to crush can be cooked whole (to save time).

NOTE: You could make this vegetarian (or vegan) by substituting the appropriate broth/tortillas!











Difficulty: Easy, but takes a while
Yield: 8 servings



FOR SOUP:
1/2 white onion, coarsely chopped
1 pound plum tomatoes
6 garlic cloves, peeled
2 dried guajillo chiles, stemmed, seeded, and ribs discarded
About 1 1/2 cups peanut oil or vegetable oil for deep-frying
10 (5- to 6-inch) white corn tortillas, cut into 1/4-inch wide strips
8 cups (64 ounces) chicken stock or store-bought low-sodium broth
1/2 teaspoon dried oregano, crumbled
1 teaspoon kosher salt
Freshly ground black pepper
FOR AVOCADO RELISH:
2 firm but ripe California avocados
1 small tomato, finely chopped
2/3 cup finely chopped white onion
1-2 serrano chiles (to taste), seeded if desired and finely chopped
2 tablespoons chopped fresh cilantro, plus 8 fresh cilantro sprigs
2 teaspoons fresh lime juice
1 teaspoon kosher salt
1/2 teaspoon coarsely crushed black peppercorns
ACCOMPANIMENT:
lime wedges

Make the soup: Preaheat boiler.

Arrange onion, tomatoes, and garlic in one layer in a baking pan and broil about 2 inches from heat, turning occasionally with tongs, until tomato skins are blistered and lightly charred, 10 to 15 minutes. Let cool.

Heat a dry griddle or heavy skillet over moderate heat until very hot but not smoking. Toast chiles 1 or 2 at a time, pressing down with tongs, until more pliable, a few seconds on each side. Transfer to a bowl. Add hot water to cover chiles and soak until soft, about 20 minutes.

Drain chiles and transfer to a blender. Add vegetable mixture and purée until smooth.


Chile and vegetable purée.


Heat 1/2 inch oil in a 9-inch heavy skillet until it registers 375˚F on thermometer. Fry tortilla strips in 5 batches, turning, until crisp and pale golden, 30 seconds to 1 minute per batch. Transfer to paper towels to drain. (Return to oil to 375˚F between batches.)

Put two thirds of tortilla strips in a plastic bag and finely crush with a rolling pin.

Combine stock and chile purée in a 5-quart heavy pot and bring to a boil, stirring. Stir in crushed tortilla strips, oregano, and salt and simmer, uncovered, whisking occasionally, until tortillas are soft and soup is slightly thickened, 30 to 45 minutes. If necessary, season soup with salt and pepper.

Meanwhile, make the relish: Quarter avocados. Pit, peel, and cut in to 1/4-inch dice. Gently stir together avocados, tomato, onion, chiles, chopped cilantro, lime juice, salt, crushed peppercorns in a bowl until well combined.




Divide relish, remaining tortilla strips, and cilantro sprigs among eight soup plates and ladle soup over mixture. Serve with lime wedges.

Prissy Prancin'

So today I had a dentist appointment. I was really worried that I was going to have a bazillion cavities. (Note: My computer has the word "bazillion" in its dictionary. Ridiculous.) I HAD NONE! Yay! I also went to Bruegger's for the first time since I've moved. IT WAS DELICIOUS. Then I tried to go to the library, but apparently the one by my house isn't open on Mondays. Sad face.

The funniest part of the whole morning was when I was walking from the dentist to Breugger's. There were these two guys behind me and one said he had to get something at the dollar store.
The other one was like, "YOU HAVE TO GET UNDERWEAR AT THE DOLLAR STORE?!"
The first corrected him and said what he actually had to get, and then proceeded to say, "I've tried to buy underwear at the dollar store before, though, and they only have women's. But if I were going to buy women's underwear I would probably buy it there. I mean, wouldn't you?"
The other responded with, "Actually, I think that if I were the type of guy who was cross-dressing, I would probably want something classier than dollar store underwear."
First guy: "I guess you're right. I mean, you'd probably want to shop at Victoria's Secret or something."
Other guy: "Or even classier than that."
First guy: "But, then again, if you're some old guy who lives in Texas and you wear regular clothes just with women's underwear underneath, you'd probably shop at the dollar store for it."
Other guy: "Yeah. If I were some old Texan, then I probably would."
Then they turned down a side street, much to my dismay (and yours, I'm sure). But at least I didn't have to hold back my giggling any longer.

BTW, LISTEN TO THE SONG. (Click on the title of the post, or on the song in the Playlist at the right.) Eagles of Death Metal are definitely one of the best bands out there right now. Every single song on that album is pure gold. GO EODM!

The Thief & The Heartbreaker

Song: 3 stars - Would like to listen to it, but not often. Promises to break into something and never does.

Things I said I would do and did:
-Make a doctor's appt
-Find out exactly what I need to get my PA driver's license

Things I said I would do and didn't:
-Do laundry
-Find out when I'm getting my dental insurance card
-Find my GRE practice book

Wow. That's not even 50%. I didn't read a chapter of a book or apply for a job today either. Man, this whole being productive thing is difficult. I also ate 642 calories too many. Or so says livestrong.com (if I want to lose 2 lbs/week). And I don't have a gym membership yet. Life sucks and then you die.

Tomorrow I have a doctor's appointment. (YAY!) I'm also wondering if I should go to PennDOT tomorrow to get my driver's license beforehand. I have everything I need. I think. If I go to bed now, I might get up at a reasonable enough time to actually go. So, off to bed!

Once Again

Oh my. I am doing a terrible job with my Resolutions. At the end of January one of my co-workers asked me how I felt about 2010 so far. I was startled by this question. What did he mean? 2010 had just begun. I had no idea how I felt about it. But one whole month of the new year had already been and gone. One twelfth of the year was over and I had nothing to show for it. None of my Resolutions were on their way to being successfully completed.

Well, obviously, two more weeks went by. Today I am determined. I will defeat these so-called 2010 Resolutions. However, they are rather unspecific in nature. I need to enumerate the ways in which I will achieve victory.

Resolution #1: Spend Less Money
a) While at work, only buy lunch out once a week.
b) While not at work, only buy meals out twice a week.
c) Never buy junk food.
d) Do not buy other "want-but-not-need"s.

Resolution #2: Be More Productive
I feel as though I'm wasting away in retail. I need to do things other than work and sit on my ass. Everyday I will:
a) Do a chore.
b) Read a chapter of a book.
c) Listen to a new song.
d) Learn a new Russian word.
e) Apply to a "real job".
f) Write a blog post. (Considering I'll be doing so many things, I should have plenty to blog about, right?)

Resolution #3: Lose Weight
My specific goal is to lose approximately 1 pound per week from now until my birthday in 2011. This is an extremely feasible goal that is easily accomplished if I can stick to Resolutions 1 and 2. However, just for fun, I'll make a list of things for this one, too. To achieve it:
a) Never eat candy or other refined sugars.
b) Work out 4 times a week.
c) Limit portion sizes.
d) Eat until full, not until satisfied.
e) Never order more than one thing when out to eat. (No more soup and an entrée.)

These resolutions work very well together. Eating less will be both healthier and cheaper, working out will make me more productive and lose weight, and so on and so forth. Since I have resolved to write a blog post everyday (preferably with the progress toward my goals), you will be able to see my progress through the year. Or at least through what's left of it.

Tomorrow my specific goals are to do laundry, make a doctor's appointment, find out what exactly I need to get my PA driver's license, find out when I will get the card for my dental insurance, and find my GRE practice book. We'll see how it goes. See you in less than 24 hours...

Caramel Chocolate Shortbread

I can't believe I started this blog almost a year ago. Although, since then I've made very few new things. Recently, my boss gave me a book for Christmas called Cookies & Bars: Simple, Perfect Recipes for Mouthwatering Cookies and Bars. I told him that for his present, I would make him a few of the recipes, his choice. This one may be the most delicious dessert I've ever made!!

This book was written for a British audience. I made these changes and mine turned out fine: salted butter, regular granulated sugar, sweetened condensed milk, and FOUR tablespoons corn syrup (1 British tablespoon = 1 American tablespoon + 1 teaspoon ... right?). I didn't have a food processor, so I used my stand mixer with the whisk attachment. I also didn't have parchment paper, so I used tinfoil (shiny side up) with Pam for Baking sprayed on it. Also, I didn't stir the caramel mixture and the only thing that happens is that you get little caramel-colored flecks in it, which is no big deal to me. You do want to make sure that you have the burner on a very low setting, though. And instead of the double-boiler melting method for the chocolate, I just used the microwaving directions that come on the chocolate's package.


Difficulty: Easy
Makes 12
1 stick unsalted butter, plus extra for greasing
1 1/4 cups all-purpose flour
1/4 cup golden superfine sugar

FILLING AND TOPPING:
1 3/4 sticks butter
generous 1/2 cup golden superfine sugar
3 tablespoons corn syrup
14 fluid ounces canned condensed milk
7 squares bittersweet chocolate, broken into pieces

Preheat oven to 350˚F. Grease a 9-inch shallow square cake pan and line the bottom with parchment paper. Place the butter, flour, and sugar in a food processor and process until they begin to bind together. Press the mixture into the prepared pan and smooth the top. Bake in the preheated oven for 20-25 minutes, or until golden.

Meanwhile, make the filling. Place the butter, sugar, syrup, and condensed milk in a pan and heat gently until the sugar has dissolved. Bring to a boil and simmer for 6-8 minutes, stirring constantly, until the mixture becomes very thick. Remove the shortbread from the oven, then pour over the filling and chill in the refrigerator until firm.

To make the topping, melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Remove from the heat and let cool slightly, then spread over the caramel. Chill in the refrigerator until set. Cut into 12 pieces with a sharp knife and serve.

Boy this blog is dusty...

Pulls out typewriter. Looks at it for a second and then blows on it to remove some of the thick dust that has accumulated. Proceeds to finish the job with Windex and a paper towel.

Or at least that's how it would've gone down had this been a tangible piece of writing... And the year 1974.

Wow. 2010. I feel old. Who knew that soon I would have to start dating things with double-digits in the year column again? 4/2/1 .../5 .../9 was just so easy to write--the 0 was so superfluous. Now I have to put a 10 at the end? Bummer.

2009 was a pretty terrible year. I earned almost no money and racked up a heck of a lot of debt. I only had a parttime job, and before that I was not a student and not working for 4 months. Relationship wise, I feel like one bad one simply cancels out the good one. Also, I did a few things during the year that I wasn't too proud of. All of these things I'd like to change.

I feel like 2010 has gotten off to a good start. I spent New Year's with Bryan and his family. They were all super nice, and I had a great time. Maybe this year there won't be a bad relationship...

New Year's Resolution #1: Spend Less Money
So far I've spent very little money, but then again it's January 3rd. Although, I did finally make it to the store to buy lunches to take to work as opposed to buying lunch out. That's going to save about $40/week. Also, I just finished my first day as a fulltime employee at The North Face. It's not exactly what I thought I was going to be doing with my BS from UM, but fulltime with benefits isn't a terrible start to the year.

New Year's Resolution #2: Be More Productive
I've got to stop sitting on my ass all the time. Yesterday I packed up some of my sister's stuff, and today I did a couple loads of laundry. It's not as productive as I'm capable of, but it's a start. Tomorrow I'm going to try and get to a store that sells yarn so I can start crocheting again. I feel like that will make me a more productive person.

New Year's Resolution #3: Lose Weight
This is kind of one of those resolutions that never dies. Why? Because I never actually do it. This year, enough is enough. It's going to get done. Every day that passes by makes it harder and harder to actually lose the weight. If I can't lose the weight when I'm 23, how am I going to do it at 33? Also, eating less helps accomplish Resolution #1. Although, when did logical reasoning ever help anyone lose weight? I'm going to go with "Never".

This year, all 3 of my resolutions are significant tests of willpower. We'll see how long I can keep them up...
